stuff i like.

4. salsa. black bean to be precise. HOMEMADE black bean salsa (if you want to get technical)


i am obsessed.

i've made two batches in the last week.

it it delicious, fresh, and it just tastes like summer! it's so easy to make & so easy to eat...

it would be a crime if i didn't share how to make this perfect snack with you, so here ya go:


Black Bean and Corn Salsa:
  • 1 can black beans, drained
  • 1 can whole kernel corn, drained
  • 1 can petite diced tomatoes, drained
  • 1/2 to 1 (depending on how much of a pansy you are) small can diced jalapeno peppers
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • A few full sprigs of cilantro (or a lot more if you're like me and cilantro makes your heart sing with joy), roughly chopped
  • Salt & Pepper to taste
Mix all this glorious-ness together, grab some corn chips (or a spoon!) and ENJOY

5. teeny bopper stores, in particular FOREVER 21.


don't judge me.

you know you like it too. trendy tops and jewelry for cheap as far as the eye can see, you'd be crazy not to like it.

But, alas, there is no FOREVER 21 in lexington.

this makes me sad.

maybe we should start some sort of petition or letter writing campaign..."bring FOREVER 21 to lexington!"

i am willing to start this up, but need some support.



6peanut butter + nutella + wasa crackers = heavenly concoction created by god to bring joy to his children.

it's a simple equation, really. my friend amanda, who is in dietitian school, introduced me to this amazing snack.

she said it was dietitian recommended.

step 1: remove one whole grain wasa cracker from package.
step 2: spread peanut butter onto cracker.
step 3: spread nutella over peanut butter.
step 4: eat it.

i'm am NOT joking...it tastes like a kit kat bar!!!! but it's actually healthy and can give you energy, and when you eat it, you reach new heights of pleasure formerly unattainable through ingestion of a snack.

it's good.
